Why Coffee Can Taste Different Even From the Same Region

Have you ever had coffee from the same region but noticed that it tasted completely different? For example, both from Gayo—one might taste sweet and fruity, while the other is more bitter with a strong body. They come from the same place, so how can that be?

It turns out, the flavor of coffee is influenced by many factors. It’s not just about who brews it, but also the long journey the beans go through before reaching your cup.

Different Microclimates

Within one region, there can be farms at higher altitudes and others at lower areas. Differences in temperature, rainfall, and sunlight create unique conditions that shape the flavor of the beans, even if they grow close to each other.

Coffee Varieties

Just like mangoes that come in many types, coffee also has different varieties. Typica, Bourbon, Catimor, Gesha—each one has its own character. So it’s natural if the taste isn’t identical, even when grown in the same region.

Post-Harvest Processing

After being harvested, coffee beans can be processed in different ways. Some are washed, some are natural, and others use the honey process. This step plays a huge role in the final taste. A washed coffee usually tastes cleaner and lighter, while a natural process brings out sweeter and fruitier notes.

Roasting Techniques

Roasting also makes a big difference. A light roast usually highlights the bean’s original flavors, medium roast offers balance, while dark roast tends to be bolder and more bitter with a strong aftertaste. Even a few seconds’ difference during roasting can change the flavor profile.

Brewing Methods

Finally, there’s the way you brew it. Tubruk, V60, espresso, or French press—all of these methods can bring out different taste experiences even from the same beans.
