The Secret of Coffee Brewing: Water, Temperature, and Ratio

Three Keys to Optimal Coffee Taste

Ever had coffee at a café, and it tasted so good? But when you make it yourself, why does it feel just so-so? Even though the beans are the same, the tools are similar, the result still doesn’t balance. The secret often isn’t in the beans or the place, but in the way we brew.


Now, there are three factors that can make a big difference in coffee brewing: water, temperature, and ratio. Let’s go through them one by one!


1. Water: 98% of Your Coffee Cup

Coffee is basically water that’s given “flavor” from coffee beans. That means the quality of water really matters.

  • Use clean, odor-free water.

  • Avoid water that’s too hard (too much lime) or, on the other hand, too pure (like distilled water).

Note: Water with balanced minerals will make the coffee taste more lively and complex.


2. Temperature: Heat That Defines Taste

The water temperature during brewing determines how much of the coffee flavor compounds are extracted.

  • Too hot (above 96°C) → coffee becomes bitter and harsh.

  • Too cold (below 90°C) → coffee tastes sour, weak, even bland.

So, keep the temperature in the range of 90–96°C so the extraction is right and the coffee flavor is balanced.


3. Ratio: The Secret of Consistency

This is the factor that makes your brew taste consistent every time. Use the standard ratio of 1 gram of coffee : 15–18 ml of water.

Note: If you prefer it stronger, use a smaller ratio (1:15). If you like it lighter, try 1:18.
