It could be because you're trying two different worlds: commercial coffee vs. specialty coffee.
What is commercial coffee?
Kapal Api, Good Day, Torabika—you've heard of them, right? Well, that’s what we call commercial coffee. In other words, commercial coffee is the kind of coffee commonly sold in stores. Typically, this coffee uses robusta beans, as they are more pest-resistant and cheaper than arabica beans.

What is Specialty?
Specialty coffee is only coffee that meets certain criteria to be classified as such. Only coffee beans with a cupping score of 80 or above (on the SCA scale) can be called specialty. Here, every step—from planting, harvesting, processing, roasting, to serving—is done with great care.
What are its distinctive features?
Transparent origin and process
Emphasizes natural flavor characteristics (fruity, floral, nutty, etc.)
Typically uses Arabica beans
Brewed using manual brewing methods (V60, Kalita, etc.)
So, which one do you prefer? If you like something simple and “as long as it wakes you up,” commercial coffee is perfect for you! But if you prefer something unconventional, specialty coffee is the way to go!
